Long before factories, before shelf-stable powders and additives with names you can't pronounce, there was corn. Whole, unbroken, sun-ripened on the stalk. Our ancestors knew its value — they built civilizations around it. They learned how to coax flavor and nutrition from each kernel through a process that has barely changed in three thousand years.
That process is called nixtamalización. It's slow. It's intentional. And it's the soul of what we do at Tortiyas.
